Chantrey's Restaurant at The Imperial Hotel has held Two AA Rosettes since 2017, making it one of the most formally recognised dining venues in Llandudno and across North Wales. The Imperial itself is a Grade II listed building on the promenade that has been welcoming guests since 1872 — one of the landmark buildings of the Victorian resort — and Chantrey's occupies its elegant main restaurant, with views across Llandudno Bay towards the pier and the headlands.
The menu is built around modern British cuisine with a strong Welsh focus. Local, seasonal and market-fresh produce is the guiding principle: Welsh lamb and beef with Protected Geographical Indication status, fresh fish and seafood from the North Wales coast, Welsh cheeses, and vegetables that reflect what is best at the market. Signature dishes have included lamb loin with crispy lamb belly and faggot, herb-crusted sea bass with samphire, and seasonal duck and venison preparations that showcase the kitchen's range. All dishes are cooked to order.
The dining room is elegant in the manner of a proper hotel restaurant — white linen tablecloths, attentive service, an expansive wine list and a setting that suits a special occasion without feeling stuffy. Head Chef Leighton Thomas has been at The Imperial for over seven years and has built a consistent reputation for quality cooking. The restaurant is also open for Sunday lunch and welcomes non-residents.
